Pumpkin Season

You know what I love about Fall?

Besides the amazing weather, gorgeous trees and colorful leaves...

Pumpkin. I love Pumpkin. Pumpkin Bread, Pumpkin cookies, and Pumpkin Spice Lattes - I love it all.

I made these Pumpkin Chocolate Chip Cookies the other night - and they are amazing. By far, the best Pumpkin recipe I have ever had. Don't they look fantastic...

1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
***I added a tad less Cinnamon so it wouldn't over power the pumpkin flavor.

DIRECTIONS
Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
Add vanilla, chocolate chips and nuts.
Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.

Seriously, go try them!! It made the house smell yummy, and made me even more excited for Harvest Parties & Hayrides!!

My mom made these when I was a kid! It's one of my favorites too! I use to make cheesecakes all the time before the kiddos arrived. I have a yummy recipe for one that involves pumpkin. Come on Fall!

Pumpkin Fluff!

1 (16 ounce) container frozen whipped topping, thawed
1 (5 ounce) package instant vanilla pudding mix
1 (15 ounce) can solid pack pumpkin
1 teaspoon pumpkin pie spice

In a large bowl, mix together instant vanilla pudding mix, pumpkin and pumpkin pie spice. Fold in the thawed frozen whipped topping. Chill in the refrigerator until serving.

I even carved out a small pumpkin and put the pumpkin fluff INSIDE the pumpkin to serve it... SO SUPER CUTE!

I served it with graham cracker sticks, but you could use anything, really.... fruit, etc.

SO GOOD.

Always nice to find a fellow Pumpkin Spice Latte lover :) You are the second person this week that has mentioned pumpkin chocolate chip cookies -- I've never heard of them before, but they look delicous so I'm gonna give that recipe a try!

Oh my word, Kate, those look and sound fabulous! I can almost smell them! Have you ever made a pumpkin roll with cream cheese filling? It is to DIE for. :)

I have the BEST recipe for a pumpkin/cream cheese roll ("log" that you cut in slices). But ... my recipe is at home; and I am 3,000 miles away from home. So, can't get it for you tonight. Sorry!

By the way ... it may seem like Fall where you live. But, we discovered this week that it is still summer in WA State (85 degrees where we live). It is winter in CO already (it snowed Monday and Tuesday). It might have been fall in KS, but we were too busy to notice, with our major trailer trouble. Now, we're in TX and it's definitely still summer here. We spent 6 hours at the pool today (at the KOA we're camping at). So ... we've travelled through 8 states this week, and we haven't seen fall yet. I'll let you know if we find it.

Oh ... we like to cook our own pumpkin, rather than using the stuff in a can.

Those look super tasty! My mom used to get me pumpkin chocolate chip muffins from a store called Earthfare (similar to Whole Foods) and they were DELIGHTFUL!

I'm definitely going to try this... as soon as I can find my baking supplies! I love pumpkin too! Have you tried the pumpkin cream cheese muffins at Starbucks? So, so good.

where I live we do not really get "Fall" {it's just called Autumn here anyways......}
I'm too far North in Australia to have the sorts of trees where the leaves change colour like that.
I might try your cookies... we don't have tinned pumpkin so would I just cook and mash some pumpkin???????

I made these today with real pumpkin, not from the can...and soooo good! Ezra and I ate 3 each in about 5 minutes!!!

Oh my word...Kate...I just tried this recipe for the first time and SERIOUSLY. These are sinfully delicious. I was only going to try a bite of one and ended up eating two!
