Alright, so maybe they're the only enchiladas I've ever made.
But either way, they are really good.
I got this recipe from Tricia over at Once A Month Mom, and it turned out yum-my! Here is the recipe for The Chile Chicken Enchiladas - it's so easy...
1 can of Enchilada Sauce (19 oz)
2 cups of diced cooked chicken
1 1/2 cups of shredded Monterey Jack cheese (I actually didn't include this in the mix - just on top)
1 cup of sour cream
1 can of chopped green chilies (4.5 0z)
8-10 tortillas (a perfect time to use homemade ones!)
1 cup shredded Cheddar Cheese for the top
Avocado and green onions (optional topping)
So I heated my oven to 350 degrees, mixed up the chicken, sour cream, green chile's, and salsa (add the Monterey cheese in the mix if you'd like)...
Put a scoop on each tortilla, and sprinkled some cheese on top of the mix (again, just how my fam liked it)
I sprayed the bottom of my pan, and put 1/2 cup of Enchilada sauce in the bottom.
Then I wrapped them up, layed them out in the pan, and put the remaining enchilada sauce on top. I had an extra disposable one, I like to use these when I'm freezing meals.
I sprinkled the top with cheese, sprayed a sheet of aluminum foil with Pam, covered the dish, and popped it in the oven for 35min, then 5min without the foil! That's it! Easy, huh? It took me barely 20min to put it all together.

Sounds so yummy and easy!! I was actually thinking about making enchiladas for dinner tonight, but this recipe is MUCH easier (and sounds tastier) than the one I was going to use. Thanks!
