Breakfast Wraps

These have become a staple in our home - I love them. So I thought I'd share, cause maybe someone else might love 'em too :)

I have been searching for something healthy to eat while on the run in the morning - which currently is every morning in our family. I wanted to make a healthy, lower calorie, high protein, breakfast wrap.

I love wraps. You wrap it, I love it.

Anyway.

I bought some high protein tortilla shells, Salsa, Southwest Egg Beaters, and some Gimmie Lean veggie sausage. Now listen, I know, veggie "meat" didn't sound great to me at first either - mainly because I am not a huge meat eater. But it works perfect for this recipe, and w/ everything mixed together, it's really good!

I cooked the "Gimmie Lean" and the eggs in seperate pans. Then mixed them together, and added the Salsa to taste.

Then I scooped some on each tortilla, and wrapped it up...


I made about 20 of them to freeze. After I wrapped them, I layed them on a baking sheet to stick in the freezer. After they were frozen, I took them out and wrapped them in aluminum foil, and stuck them back in the freezer. I figured them out to be about 200 calories each - nice, huh?

Yummy. Quick. Healthy.

I pop them in the microwave for about 2ish minutes, and...that's it! Great, right?!

Random, but we only have 16 days till Summer, and the girls are sooo excited. Anyone else having a countdown till the pool opens?!

Well, I Tried!

I sat them down, and offered rewards...

Like a special treat, or a later bedtime...

But I don't think they bought it...

"girls sit still...look at mommy...Char, don't push her over...seriously girls, just one picture...Reese, we can go potty as soon as we're done...no no Raya, no fussin'...everyone smile...alright, over here...you're not going to get your treat!"

Does bribing ever work :)!?


Apparently not.

There it is, the best shot I could get of all my girls! Sheesh...

Maybe next time I'll get that "perfect" shot, right!?

I Love Surprises

Well, you all were right, yesterday was a new day - and today is yet another one. Good thing God's mercies are new everyday, huh? Thanks so much for your encouragement, I sooo appreciate it.

I did get a very nice surprise yesterday...

A move in date!!

I know, it doesn't sound that exciting, but believe me, it is. In 8 days we will move into that home we've been working on since March 4th. Our insanely outdated house will be finished. I will post before and after pictures as soon as I have all the after ones :). All the floors are starting to go in - in the next few days, but tell me...

I should keep this rockin' carpet that's already in the basement, right??

I know - Don't rush to your nearest carpet store to try and find it :).

I Know, I've Said It Before...

I should be fired. Mercy, I was one "mom fail" after another today. Tonight I sit here and replay the way I acted as I reached the end of my rope - I feel awful.

We have been staying with my inlaws for the past (almost) 6 months while we are in "transition." Our new (to us) home is almost ready...but the road has been long & stressful. Eric goes to the house straight from work, so we rarely see him. Our house with the perfect (for us) layout, has needed a complete makeover. My man is handy and dedicated - but it has been a big job...

Easy? No. Worth it? Yes. Patience? Me? Very little.

I have tried my best. And yes, I could try harder. Ahem.

The 45min drive to and from school, not having Eric here at all, and just not being able to go "home", is taking it's toll. I'm exhausted, I'm frazzled, and not myself. I can even see the stress of the situation in the girls...I can see it's affecting them too.

Lord, please help me to be patient - I don't want my little loves affected by all this.

But today, the girls paid for my stress. Tonight was one of those nights when I sat down and cried after I tucked them in, knowing that I have failed today. I feel terrible. So I just wanted to post this poem that I posted a while back...it really says it all...

A Cross Mother

Oh God, I was so cross to the children today. Forgive me. I was discouraged and tired - and I took it out on them. Forgive my bad temper, my impatience, and most of all, my yelling. I am so ashamed as I think of it.

I want to kneel down by each of their beds and ask them to forgive me, but I can't.

They wouldn't understand. I must go on living with the memory of this awful day, and my unjust tirades.

Hours later I can still see the fear in their eyes as they scurried around trying to appease me, thinking my anger and raving was their fault.

Oh, God, the helplessness of children. Their innocence before the awful monster, the enraged adult.

And how forgiving they are, hugging me so fervently at bedtime, kissing me goodnight.

All I can do is straighten a cover, touch a small head burrowed in a pillow, and hope with all my heart that they will forgive me.

Lord, in failing these little ones that you have put in my keeping, I am failing You. Please let your infinite patience and goodness replenish me for tomorrow.

We Are...

Still under construction at the new house...

Still renovating, still tearing out the old to make room for the new...


We are getting ready to decorate the playroom...I can hardly wait...

I have 4 colors for that room, you think that's too many :)???

I have to shove a house full of toys and dress up into that room, so I'm on the hunt for some good organization tips.

They Partied Hard

We did Stations - it was a huge hit!

They made necklaces...

They painted nails...

And they decorated their own cupcakes...

I'm pretty sure they all left on a sugar high :)...

We sang, we opened presents, and ate cake...

It was a great night. Good times, lots of family, and great friends...

These little birthday girls were a little tired last night...

They partied hard :).
