On A Lighter (Pumpkin) Note

Oh it's good. Well, both of these recipes are good. Amazing actually.

I thought it would be a good idea in the middle of all our pumpkin madness to bake some things on the lighter side.

Although I guess eating 3 muffins in an hour sorta cancels out the "light" part. Not that I've done that. Ahem.

So, first are the best and easiest Pumpkin Muffins. Just 2 ingredients...


Mix the cake mix (don't add anything, no eggs, oil or water) and 1 can of Pumpkin together. Put mixture into a cupcake pan...try not to eat ALL the batter, you could if you wanted to though because there aren't any raw eggs :).


Bake at 400 degrees for about 15-20 minutes. And enjoy some yummy, pumpkin-y, heavenly muffins.

We sprinkled powdered sugar on top...


Next is super popular around here and another light and easy recipe - Pumpkin Fluff Dip.

All you need is: 1 can of Pumpkin, 2 packages of Instant Vanilla Pudding, 1tsp Pumpkin Pie Spice, and a container of cool whip...


(I heard that some people add 2 containers of cool whip, I may try that next time to make it a little more whipped)

Mix it all together and serve with Graham Crackers...


SO good, friends! And I read that it's only 64 calories a serving, however I don't know what "a serving" is.

Lets just pretend that...oh I don't know, half the batch is a serving. That seems reasonable to me.

There they are, our latest pumpkin adventures. The dip is good, but you MUST try the muffins. They are the real deal, sisters.

I think I'll be buying a can of pumpkin next week at the grocery store. (I've already got the cake mix.) Thanks for the recipes!

I was sad to see that a box of cake mix is consider one ingredient. I am scared to even see what is listed for ingredients of that box.

And whipped topping? Ugh. Just not the way we eat at my house. We do enjoy desserts but we stick to whole foods, few ingredients, organics and local. Making real whipped cream is so easy and has only three ingredients (though you could add more for different flavors).

Well we do eat lot's of organics in this house too, but I feel that it's not a huge deal to splurge on certain things!

This looks super yummy! We love muffins so I'll have to make these soon. And we love are big fans of cake mixes over here :) so look forward to trying this easy recipe!

Can't wait to try these recipes! You are putting us in the mood for pumpkin treats. We also try to eat very healthy 'most' of the time, but you definitely need to splurge on some sweet treats!! (and seriously cake mix every once in a while will only bring happiness into your home! :-) You are an incredible mother, baker and photographer and I love following your blog!!

I did the same thing with a cake mix except I added a can of mushed up peaches and all the juice. Nothing else either! It was delicious!!!!

I think I am going to add a twist to this recipe and I will let you know...I make a great pumpkin chocolate chip muffin so i think I may try it with chocolate cake mix. If the kids hate it I am pretty sure I will love it, and the idea of spice mix sounds great too!

We made the muffins on Saturday and they are delicious! I had to double the recipe because my store didn't have the small cans. I will definitely be doubling it in the future as well. One batch wouldn't have lasted this family of 8 very long anyway! :) Thanks for the great recipe!
